Add a little mayonnaise so the colors show through. Gently mix. Garnish with banana rings
They were doing something right without knowing the science of it. A lot of vegetables, greens in particular, contain vitamins and micro-nutrients that are fat-soluble, meaning your body can absorb and utilize them better if you eat them with a bit of fat - hence, oil-based or cream-based salad dressings. They literally make your salads more healthful! Low-fat or fat-free salad dressings are not really doing you any favors.
