The recipe is very good, quick and delicious.
Sauerkraut Pancakes

10 heaped tablespoons of sauerkraut with carrots (if the cabbage is bland, leave it at room temperature overnight until morning. In short, you need classic Russian sauerkraut, buy it at a Russian store)
10 level tablespoons of flour
2 level tablespoons of sugar
2 medium eggs
0.5 teaspoon of baking soda
Unrefined oil for frying

Knead everything with a spoon, form into pancake balls with wet palms, place in hot vegetable oil, and flatten in the pan.
Makes 12 pancakes.

Please do not change the proportions or omit the sugar from the dough.

Serve hot with tea, instead of pirozhki (pies). Serve cold for breakfast or with salads for dinner, for example, with salads or mixed vegetables, as in the photo.
Pictured is sour cream and mixed vegetables (and carrot jam).
But they can also be eaten plain.

Vegetable mix

1 onion
2 small eggplants or 1 medium eggplant
1 fresh red chili pepper, seeded and thinly sliced
Sweet peppers (small; if large, halve each):
1 red
1 green
1 yellow
1 orange
cilantro or parsley leaves
green onions about 10 cm long, no more
salt
black pepper
unrefined vegetable oil

Cut the eggplants into small cubes and the onions into pieces the same size as the eggplants.
Heat the oil in a frying pan and add the onions. Sauté until translucent. Add the eggplants and freshly chopped chili peppers and fry for 3 minutes over medium heat. Finely dice the peppers, set aside 0.5 of each pepper in a bowl, and place the remaining half of the peppers in a frying pan Stir the mixture and simmer until tender.
Before serving, combine the warm stewed mixture with the raw pepper mixture, finely chopped green onions, and cilantro leaves.

The vegetable mixture can be cooled and refrigerated, or reheated before serving and mixed with fresh peppers, onions, and herbs.
Serve with fish as a side dish. It's delicious with pita bread inside, or on fresh bread and devoured while looking up at the sky.
